The flavor of Nepalese long pepper is very complex. On the palate, it offers a characteristic taste of dark chocolate and roasted cocoa beans, which gives it the name choco pepper.
In the mid-palate, heat arrives which gradually rises, as well as a mixture of sweet spice notes reminiscent of Saigon cinnamon, then the spiciness becomes more pronounced and tangy, becoming biting.
At the end, it leaves a freshness with flavors of menthol and camphor, the spiciness gradually descending, with an incredible length in the mouth.
It is used both in cooking and in baking, in order to benefit from all the flavors of this pepper I advise you to favor the mortar with the mill.
