Mace is the thin shell (aril) of the nutmeg.

The flavor of mace is an extension of nutmeg.

In the mouth, it has a slight note of bitterness which enhances the cuisines that accompany it. Great chefs have mastered its use, and use it to bring out the aromas of very fine fish, for example...

You will easily combine it with other spices in cooking, such as ginger, cardamom, coriander, anise, cinnamon.

You will add it to white sauces, purees, compotes, pâtés, terrines, punches, and...hypocras!

If you use whole mace, break it into small pieces to add to your cooking, rather at the end of cooking.

Goes perfectly with chocolate, caramel or homemade chutney.
